Branch Overview
Marine Deployments and Support Branch (MDSB) deploys sea-going marine Border Force Officers to Australian Border Force Cutters (ABFC), other associated assets assigned for ABF operations and Australian Defence Vessel (ADV) Ocean Protector (OP) where they undertake a range of border enforcement activities throughout the Australian Exclusive Economic Zone (EEZ). This includes offshore maritime patrols and response, surveillance and deterrence activities that support civil maritime security operations and respond to identified Maritime Security Threats (MSTs) including:
- Illegal Maritime Arrivals (IMAs)
- Maritime Terrorism
- Piracy, Robbery and Violence at Sea
- Prohibited Imports and Exports
- Exploitation of Natural Resources
- Illegal activity in Protected Areas
- Marine Pollution
- Compromise to Bio-security.
ABFC crew perform varied duties, which include boarding operations, bridge and engine room watch keeping, deck and engine room tasks and maintenance, meal preparation and vessel cleaning tasks. Officers maintain a capability to allow for re deployment within the fleet or general duties within ABF.
Position Summary
The Marine Cook is responsible for providing a nutritious, balanced and varied diet for crew (10 to 28) and transportees. Marine Cooks are highly competent and experienced in planning meals which provide options for varying dietary and cultural diversities.

Our ideal candidate
MDSB are seeking applications from professionals who can respond positively to a challenging and high-pressure environment. The programme of the Branch is high profile, with added sensitivity due to the armed nature of the workforce, demanding a high level of training and qualifications as well as liaison with other agencies and ABF Commands.
The work you will undertake entails spending substantial time away from home for extended periods usually up to 22 days on a Fly In Fly Out roster with the possibility of extension (in exceptional circumstance).
The Marine Cook must also manage and be responsive to a range of requirements, including:
- Be able to perform duties in the maritime environment including lengthy deployments on unstable platforms in uncertain and variable weather and sea conditions.
- Demonstrate flexibility and initiative in response to allocated work, including assisting in the completion of work outside of assigned responsibilities.
- You will be proficient in all facets of food preparation and food safety and hygiene, and possess the requisite qualifications and professional experience required to effectively perform the role.
- Experience working at sea or in remote environments is highly desirable.
- Ability to cope with sea sickness and be compatible with sharing facilities, when living within the close constraints of a vessel for an extended period of time.
Deployment to ABF vessels reflects the operational priorities of the ABF as determined by the relevant policies and procedures. Officers are expected to be flexible and agile in responding to rostering and deployment by the ABF.
Depending on operational requirements and the circumstances of candidates, the Marine Unit permits domiciling in Brisbane, Sydney, Canberra, Melbourne, Adelaide, Perth and Darwin.

- Certification and Watch keepers (STCW), Maritime Labour Certificate (MLC), Load Line, International Maritime Dangerous Goods (IMDG), Convention on the International Regulations for Preventing Collisions at Sea (COLREGS) and Search and Rescue (SAR).
- Compliance with Vessel Safety Management Systems (SMS).
- Understand and apply the conditions as specified in the Department of Home Affairs Enterprise Agreement 2024-27.
- Ability to interpret and apply relevant Departmental policies, standard operating procedures and instructions.
Duties and responsibilities
Specific Duties / Responsibilities
- Provide a well-balanced and nutritious menu, utilising the ABFC cyclic menu (as a guide) and using the food preparation equipment provided.
- Satisfying dietary and allergen requirements.
- Providing basic meals for transportees under ABF care, taking into account cultural diversities.
- Cleaning, inspecting and maintaining galley equipment, kitchen appliances, and work areas to ensure cleanliness and functional operation.
- Managing food and consumable stocks, ensuring suitable storage utilizing the industry standard Fly in Fly Out (FIFO) method.
- Conducting accurate stock takes and using this information to assist in the reordering of food and supplies for the following patrol.
- Provide logistical feedback and information to Marine Logistics Services.
- Provide administrative support, including responsibility for victualing duties.
- Provide direction to other crew members who may assist in the galley.
- Promoting a professional working and dining environment, and ensuring a safe workplace under the departments WH&S Policy.
- Liaise with ships management team on galley operations.
- Ability to plan and modify meals, in accordance with operational tempo, unpredictable sea states and inclement weather.
- Ability to manage on-board emergencies and lead small teams.
- Participate in vessel husbandry, emergency drills and situations.
- Ability to think logically when fatigued and in a stressful environment.
- Manage garbage in accordance with the requirements of the vessel's Garbage Record Book and Environment Protection and Biodiversity Conservation Act 1999, in particular International Convention for the Prevention of Pollution from Ships (MARPOL)
- Act as Dresser and Breathing Apparatus Control Board Operator during emergencies.
Mandatory Qualifications
- SIT30816 Certificate III in Commercial Cookery OR MAR30415 Certificate III in Maritime Operations (Marine cookery)
Mandatory Role Requirements
Must be able to obtain and maintain the following:
- Certificate of Safety Training (COST) STCW which include the following components;
- Elementary First Aid (STCW Reg VI/1 and Code Section A-VI/1, Table A-VI/1-3;
- Fire Prevention and Fire Fighting (STCW Reg VI/1 and Code Section A-VI/1, Table A-VI/1-2);
- Personal Safety and Social Responsibilities (STCW Reg VI/1 and Code Section A-VI/1, Table A-VI/1-4);
- Personal Survival Techniques (STCW Reg VI/1 and Code Section A-VI/1, Table A-VI/1-1); and
- Security Awareness Training (STCW Reg VI/6 and Code Section A-VI/6, Table A-VI/6-1)
- Certificate of Proficiency Marine Cook (Via an AMSA Application)
- AMSA Certificate of Medical Fitness for sea duty in accordance with Marine Orders Part 76 (Health Medical Fitness) and adhering to the guidelines for Medical Inspectors of Seamen as set out by AMSA. Including, being certified fit to handle food in AMSA medical.
- Ability to undertake and successfully complete Australian Border Force (ABF) Operational Readiness Assessment (ORA); which includes the Basic Fitness Assessment (BFA) + swim and pass a non UoF psychometric assessment
- Successfully complete Food Safety Supervisors (FSS) Certificate
- Successful completion of the Bay Class Marine Cook task book and endorsement
- Successfully complete and maintain an Provide First Aid Certificate (HLTAID011) and Provide Cardiopulmonary Resuscitation (CPR) (HLTAID009);
- Successfully complete ABF Basic Induction
- Successfully complete Marine Induction Training
- Vessel Induction Checklist
- Swear an oath or make an affirmation
- Actively participate in career management (postings and deployments)
- Be uniformed

Other Information
These positions are sea-going positions and as such living space is limited with shared cabins and communal ablutions for crew. There may be limited internet access and phone connectivity for extended periods of time. The ABF Cutters operate in remote areas and there is limited opportunity to be transferred ashore during deployment.
Employment is subject to the ABF Career Management and Posting Principles and is subject to postings consistent with that framework. Whilst employed as a sea-going Officer your conditions of service will be commensurate as specified in the Department of Home Affairs Enterprise Agreement 2024-27.
This is a designated ABF position. You will be a sworn officer subject to the ABF Career Management Posting Policy and the Uniform and Appearance Standards Procedural Instruction. Officers are subject to employment conditions as specified in the Department of Home Affairs Enterprise Agreement 2024-27.
Although every effort will be made to maintain a scheduled roster, occasionally due to operational requirements your roster patterns may vary in accordance with the Department of Home Affairs Enterprise Agreement 2024-27.
